On this ANZAC weekend, I’m making ANZAC biscuits and thinking about all those whose lives were so affected by WW1.

Whether the biscuits were made as fundraisers by those back home or made to send to troops who were overseas, we are not really sure, but making them links us to New Zealand WW1 history and it is one way we can remember those turbulent days that shaped the lives of those who lived (and died).

With the flavours of golden syrup and coconut, they should be chewy in the middle and crispy on the outside. They will keep in a tin or airtight container for up to a week.
