When I travel I love to have authentic experiences… and a cooking class with Peta Mathias in Uzès in France didn’t disappoint…

Imagine a hot sunny Wednesday in the height of summer. You arrive in the cool of the morning in the ancient walled market town of Uzès in Southern France to spend the day food shopping and then cooking with Peta Mathias in her private home… what could be nicer?

We were a group of six adults and one child, and we wandered around the market, chatting, tasting and buying the ingredients for our culinary adventure. A short walk back to Peta’s house together, then we were into it! In her cook’s kitchen, we made pissaladière (a local delicacy of bread dough topped with tomatoes, olives and anchovies), capsicums stuffed with tomatoes and mint, confit chicken (caressed by the duck fat, as the cooking term is in French) followed by chocolate and almond tart served with crème fraiche.
