One of the things that I’ve been doing in lockdown is converting my new book, Coastal, into an e-book.
Whereas for printing every image needs to be as large as possible, for an e-book every image needs to be as small as possible. I didn’t want to lose the feel of my book, which is crammed with photos, printmaking, illustrations and other design elements. But I’ve now got the file size from over 100MB down to less than 10!

At the start of lockdown for NZ, where my cousin lives and here in the UK, she started up a Facebook page called “We’ve got this” to help out with what to cook with what’s in your freezer, fridge and cupboards. We all contributed over the weeks and there were some amazing dishes created! It’s tailed off a bit now ( we are still in partial lockdown in the UK though) but it proved how adaptable we can be with what’s available. For instance, I now make Moussaka with potatoes instead of aubergine as it holds together better and tastes amazing so will continue with that!

Nice to read your comment and hear stories of people working together… there is so much food tucked away at the back of the cupboard that never gets eaten! I’ve been trying to be flexible with my ingredients too and make the best use of what I have. Best regards from NZ.
